Traditional red vinegar rice

Misaki carefully prepares its rice.

Nigiri sushi is said to have originated in the Edo period, and the red vinegar rice used since that time has been served mostly at high-end sushi restaurants.
Misaki’s red vinegar rice is made from sake lees that have been aged for two years. The mild acidity and richness brings out the flavor of the ingredients, allowing you to enjoy a more authentic sushi.
